Bamboo steamer baskets are the standard steaming vessel for dim sum, dumplings, and sticky rice across East and Southeast Asian cuisines. They stack, allowing multiple items to steam simultaneously over a single wok of boiling water.
Why bamboo vs metal
Bamboo absorbs excess condensation that would otherwise drip from the lid back onto dumplings, making the wrappers wet and sticky. Metal lids concentrate and return all condensation. For dim sum, the bamboo lid is not optional.
Sizing
Two standard diameters: 20 cm (fits a 28 cm wok) and 25 cm (fits a 32–36 cm wok). Measure the rim of your wok to find the right size — the basket should rest on the wok’s sloped sides above the water line.
Care lifecycle
Bamboo steamers last 2–4 years with regular use. The first signs of deterioration are blackening at the base and a musty smell that survives drying. At that point, replace rather than clean.
