The electric rice cooker is the defining kitchen appliance of East Asian and Southeast Asian homes. It uses a thermostat that detects the temperature rise that occurs when all liquid has been absorbed, automatically switching from cook to warm.
Fuzzy logic vs basic
- Basic (on/off): single thermostat; works well for standard white rice
- Fuzzy logic: microprocessor adjusts temperature and timing; handles mixed rice, brown rice, porridge, and varying quantities without manual adjustment
- IH (induction heating): heats the inner pot directly; more even cooking; significantly more expensive
Water ratio
For Japanese short-grain: rice to water 1 : 1.1 by volume. For jasmine rice: 1 : 1.25. The cooker’s markings are calibrated for standard white rice in the specific inner pot — follow the pot’s markings rather than generic ratios.
