Ichiran is a tonkotsu ramen chain founded in Fukuoka in 1960, famous for its single-menu approach and individual dining booths (“flavor concentration booths”) that minimize distractions. While not itself the originator of the Hakata tonkotsu style, Ichiran is one of the most prominent exporters of it globally and has shaped how the style is recognized outside Japan.
