Hủ tiếu is a clear pork-and-dried-squid based broth served with thin dried rice noodles (or egg noodles), pork slices, shrimp, quail eggs, and crispy shallots. Unlike pho, the broth is sweeter and lighter, without spiced aromatics.

Nam Vang style (Phnom Penh)

The most popular international variant. The broth is clarified with dried squid, very clear and sweet. Served with a wider range of proteins (pork, liver, prawn, squid). A raw egg yolk is often cracked into the hot broth.

Dry vs soup

Hủ tiếu is also served ‘dry’ (khô): noodles tossed with lard, oyster sauce, and fish sauce, served with the broth on the side for sipping. The dry version concentrates the seasoning on the noodles rather than distributing it through the broth.
